Easy Cabbage Stew


450 g/ 1 pound extra firm tofu

1 onion chopped

1 shallot chopped

2 cups diced tomatoes

340 g/ 12 oz. tomato sauce

1 cup pinto beans

1 small cabbage chopped

2 cups water

Sea salt to taste

½ chili pepper minced


Brown tofu, onion, and shallot. Add tomatoes, sauce, and beans. Bring to a boil. Stir in the cabbage, chili pepper, and sea salt. Simmer for 30‐45 minutes. This stew is great when served with a fresh garden salad.
