Morning Lentil Soup

Ingredients:

2 cups lentils

8 cups water

1 medium onion chopped

2 stalks celery chopped

1 carrot chopped

1 clove of garlic minced

½ teaspoon oregano crushed

3 tablespoons parsley chopped

Directions:

Rinse and sort through the lentils making sure there are no sticks or stones in them. Bring 4 cups of water to a boil and add the lentils. Bring to a boil them reduce heat, cover and simmer for 30 minutes or until tender. Drain lentils and rinse. add all remaining ingredients, cover and simmer for 3 hours.

Makes 6‐8 servings
