Salad Ingredients:
1 cup green peas
1 cup carrots
¼ cup diced tomatoes
1 cup green beans
Dressing Ingredients:
½ tablespoon lemon juice
¼ teaspoon lemon zest
2 tablespoons olive oil
2 tablespoons pumpkin seeds
¼ teaspoon mustard seeds
1 cup romaine lettuce ‐ shredded
1 cups spinach ‐ shredded
Preparation:
Steam carrots, peas and green beans until tender being careful not to overcook.
Combine steamed vegetables and diced tomatoes.
Mix all of the dressing ingredients together and pour over vegetables. Gently tossvegetables, vinaigrette, lettuce, and spinach. Serve immediately and enjoy.
