Warm Black Eyed Pea Soup


½ cup black eyed peas

½ cup brown lentils

1 onion coarsely chopped

2 diced tomatoes

½ cup vegetable stock

1 tablespoon cumin

Sea salt to taste


Bring 3 cups of water to a boil and add the black eyed peas. Boil for at least 20 minutes.

Add all other ingredients except the tomatoes and bring to a boil. Reduce heat, cover and simmer for an additional 30 minutes. Add tomatoes and simmer until warmed. Place half of the soup in a blender and blend until smooth. Combine the blended and unblended portions and serve hot.
