Down Home Mustard Greens

Ingredients:

2 tablespoons coconut oil

1 medium onion coarsely chopped

2 small shallots minced

2 tablespoons vegetable broth

900 g/ 2 pounds mustard greens washed with large stems stripped out

½ teaspoon sea salt

¼ teaspoon horseradish minced

2 tsp. lime juice

Directions:

Sauté onion, shallots, and garlic in oil in a large pan for 8 minutes or until golden. Add vegetable broth. Tear greens into pieces and place in pan. Cover and cook for approximately 20 minutes or until tender, stirring occasionally. Remove from heat and toss with lime juice, sea salt, and horseradish.

Makes 6 servings
