Fava Bean Wrap

Ingredients:

2 cups fava beans pre‐cooked

1 ½ tablespoons coconut oil

1 large onion chopped

1 large tomato diced

1 teaspoon ground cumin

1 teaspoon minced garlic

¼ cup freshly chopped parsley

¼ cup fresh lemon juice

Pepper to taste

Large greens for wraps

Directions:

Combine all ingredients (except the greens) in a large skillet. Cook for approximately 15‐20 minutes. Wrap in large greens and serve warm.
