Curried Lentil Scramble

Hey Guys just another healthy nutritional snack/meal for you to test your tastebuds with!

Ingredients:

1 teaspoon coconut oil

1 onion chopped

1 ½ cups lentils fully cooked

½ teaspoon curry powder

¼ teaspoon turmeric

¼ teaspoon cumin

Pepper to taste

1 diced tomato

1 cup fresh spinach chopped

Directions:

Sauté the onion in coconut oil for 3‐5 minutes.

Add the remaining ingredients except the spinach. Cook for 5 minutes or until heated thoroughly, stirring frequently.

Add spinach and cook an additional 1‐2 minutes or just until the leaves begin to wilt.
